Executive Chef Benjamin Collombat

From his beginnings working alongside Michelin-starred Chef Philippe Da Silva in the Var region of France, through a number of experiences abroad, to becoming Executive Chef and right-hand man to Guy Martin at the iconic Grand Véfour, Chef Collombat has demonstrated his talents and creativity through a remarkable career. Twice starred by the Michelin Guide and awarded various distinctions by the Gault & Millau Guide, Chef Collombat now brings his expertise and passion to the Brigade du Château.Thanks to his experiences and inspiration around the world, Chef Collombat offers a cuisine in motion, blending plants, local produce and subtle combinations of herbs and spices.
